Covid-19 has forced us to stay home thus we have to make meals including lunch every day. But who has time to make all the meals in a day if you are in zoom meetings and deadlines? These 5-minute lunch recipes are nutrient-rich and very satisfying than anything that you can get in a bite, bar, or shake form. We don't need a lot of time to make lunch but need the right recipes. 

  1. Simple Chickpea Salad: The secret to a good lunch is bringing more than one nutrient into the table. Chickpeas are definitely in the front. They contain sources of fiber and protein which helps to keep the sugar levels stable. Legume is combined with cucumber, tomato, olive oil, red wine vinegar, etc for a specially cooked Mediterranean - inspired meal. 

  2. Spinach quesadillas: quesadillas are a perfect five minutes lunch. The cheese provides protein, mushrooms, or pre-cooked shredded chicken can be added. If we include spinach into it makes it fiber-rich and opting for wheat tortilla will boost fiber content even more. 

  3. Salmon Salad: This is another very nutrient-rich food that fills different nutrient buckets at the same time. This a good source of protein and healthy fats. Enjoy the simple salmon salad with a wrap or sandwich or use it as a filling.

  4. Garlicky Tuscan Kale salad with savory chickpeas: This is a quick lunchtime salad that doesn't fall into the sad category This salad has all the three components of flavor, nutrients, and texture. The ingredients should be cooked for two minutes on the stove so they soak up the garlic and onion. This takes the salad to a new level. 

  5. Veggie coconut wraps: Every ingredient in these wraps is high in fiber content. Bell peppers are the key to a nice crunch and avocado provide creaminess along with protein and fiber.

  6. Tofu "egg" salad sandwich: Using tofu as a substitute for egg works. The plant-based protein mixed with vegan mayo or Dijon mustard, nutritional yeast, turmeric, and a few other spices makes it a good blend. This vegan doesn't require any cooking like real eggs, which why it comes together so quickly.

  7. Masala vegetable sandwich: A good vegetarian sandwich is always a great find. The key ingredient is chaat masala besides veggies. This traditional Indian spice mix includes a blend of coriander, cumin, mango powder, citric acid, mint leaves, etc. This is like a breakfast blend but this mixture has lunchtime on lock.
